How to cook at home fragrant dried melon

Dried melon is a delicious dried fruit that came to us from Tajikistan. He is loved not only by adults, but also by children. Candied fruits are not just tasty, but also very useful, because the nutrients that are in the fresh fruit are preserved in dried form. This delicacy can be used in the form of snacks, and for the filling of various desserts.

Peculiarities of drying melon at home

Several varieties of melon plant are suitable for drying.

It is possible to dry all varieties of fruit, but it is best suited for this solid and fragrant, such as:

  • Torpedo;
  • Pineapple
  • Gulyabi;
  • Koy-bash;
  • Wintering.

For drying, you should choose only those fruits that have not been damaged. In order to prepare them for the process, it is necessary for 2 days to wither the fruits entirely. Those melons that are not damaged in the process of curing, you need to rinse, cut into strips and remove the seeds. The crust along with the subcortical layer should be trimmed.

After drying, the product will dry. The thicker the pieces, the longer they will dry. In order to prevent moisture from falling into the dried fruit, the strips can be braided into a pigtail and wrapped in a film. Weight reduction will be about 10 times. Ready dried fruit should be soft, resilient and slightly sticky.

Appearance of the finished product

In addition to drying and drying, you can make candied fruits. To make them, you need to cut the melon into cubes and cook in a syrup of sugar and water. Then for half a day it should be left in a cool place. This process is repeated 2 - 3 times.

Ways

There are three cooking methods:

  1. In the oven.
  2. In the electric dryer.
  3. In the fresh air.

Each method has its advantages and disadvantages. But still, the process in the electric dryer will be more efficient. It does not take up much space and does not depend on weather conditions. That is why this type of dehydration is used on an industrial scale.

Oven drying is the most affordable way. It does not require much effort, but it will take a lot of time. It occurs in several stages:

  1. Preheat oven to 220. Lay parchment paper on a baking sheet and brush with oil. Put the pieces so that they do not touch each other. Put the pan in the oven for 15 minutes.
  2. The temperature must be reduced to 80. The oven door slightly open. Leave everything for 6 hours, with the need to turn the pieces every half hour. It is required for uniform removal of moisture.
  3. After this, the product should be left in the room so that it is dried completely.

In the electric dryer

The electric dryer, in contrast to the classical methods of drying, has several advantages:

  • high speed of drying with preservation of taste;
  • weather independence;
  • lack of contact with insects;
  • compact arrangement of a large number of fruits.

The principle of operation of such an apparatus, for example, VOLTERA 1000 Lux is the removal of moisture from the fruit by heating with an infrared emitter and blowing hot air. To dry this way, cut the flesh very finely. Thickness should be no more than 5 mm.

Stages of drying melon:

  1. Warm up the machine for 5 minutes. When warming up the lid should be closed.
  2. Put the strips on trays in one layer, keeping the distance between the pieces.
  3. Put the trays in the device and dry the melon for 10 - 11 hours at a temperature of 55 - 70.
Since the temperature at the bottom of the device is higher, the trays should be interchanged periodically. To protect against overheating, every 3 hours you need to turn off the dryer for 10 minutes.

In the open air

When drying naturally, the thickness of the strips should be about 3 cm. The melon can be hung or dried on a wire rack. If the melon is suspended, then a jumper is left at the end of the strips, for which you can hang several pieces. The fruit must be wrapped with gauze.

Put in a well-ventilated place.

Dry the product in this way for two weeks. To evaporation of moisture went evenly, you should turn it every day. The best weather for drying is wind. If the fruit is much in the sun, it can become very dark.

Storage rules

You can store dried melon:

  • in glass jars;
  • in fabric bags;
  • in paper bags.
In such a container, it may lie at room temperature, for example, in a pantry or in a kitchen pencil case. If the melon is dried in the form of a pigtail, then you can wrap it with a film and put it in the refrigerator.

Melon in the form of dried fruit is very versatile. If you eat it yourself, then it may seem to the sweet tooth that the melon is not sweet enough, then you can safely sprinkle it with powdered sugar. It can also be used as an additive, for example, in compote or as a filling for baking. And it can also give a special taste to already familiar dishes.

Dried melon is not inferior to fresh, and even surpasses it. After all, it is stored much longer, so even in winter you can feel a little summer.
